- 2 cooked chicken breasts (grilled, baked, or shredded rotisserie)
- ½ cup sweet chili sauce
- 4 large flour or whole wheat tortillas
- 1 cup shredded lettuce
- 1 cucumber, sliced thin
- 1 bell pepper, sliced
- 1 carrot, julienned
- Optional: shredded cheese
- Optional: avocado slices
- Optional: chopped herbs (cilantro, mint, basil)
- Optional: squeeze of lime
- Olive oil
- Salt & pepper, to taste
Instructions
- Season fresh chicken lightly, drizzle olive oil, cook to 165°F / 74°C. Slice or shred. Toss with sweet chili sauce until coated.
- Slice cucumber, bell pepper, carrot thinly; shred lettuce. Pat dry. Chop herbs and slice avocado if using.
- Lay tortillas flat. Layer lettuce, sauced chicken, veggies, and optional toppings. Add lime for brightness if desired.
- Fold sides inward, roll tightly from bottom. Toast in dry pan 1–2 minutes per side for warmth. Cut diagonally to serve.
- Serve immediately or wrap in foil for portability. Enjoy cold or slightly warm.
