Description

A whimsical, gourmet upgrade to the classic toaster pastry. Combining a soft cake-flour sugar cookie with vibrant homemade strawberry jam and a glossy vanilla glaze, these cookies capture childhood nostalgia with a hidden center of real fruit reduction.

Homemade Strawberry Filling

  • 6 oz strawberries, fresh or frozen
  • 1/4 cup granulated sugar
  • 2 tsp cornstarch, 2 tsp lemon juice, 0.5 tbsp butter

Soft-Batch Sugar Cookie Dough

  • 4 cups (450g) cake flour, 1 cup softened butter
  • 1 1/3 cups sugar, 2 large eggs, 1 tbsp cornstarch
  • 1 tsp vanilla, 1.5 tsp baking powder, 0.25 tsp soda, 0.75 tsp salt

Glossy Pop Tart Glaze

  • 1 1/2 cups powdered sugar, 1 tbsp light corn syrup
  • 12 tbsp milk, 1/4 tsp vanilla, Rainbow nonpareils

Instructions

Filling: Simmer berries, sugar, cornstarch, and lemon juice until thickened. Stir in butter; chill until cold.

Dough: Cream butter and sugar. Add eggs and vanilla. Mix in dry ingredients. Chill dough for 30–60 mins.

Assemble: Encase 2 tsp of cold filling between two dough halves. Pinch seams tightly and roll smooth.

Freeze & Bake: Freeze balls for 15 mins. Bake at 375°F for 14–16 mins until edges set but tops stay pale.

Glaze: Whisk glaze ingredients and spoon over cooled cookies. Top with nonpareils.

Notes

The ‘Snap-Dry’ Glaze: Corn syrup provides a high-gloss finish and allows the icing to set firmly for stacking.

Seam Security: Any gap in the dough will allow steam from the jam to escape, causing a hollow or burst cookie.

Temperature Control: Freezing the dough before baking helps it maintain its structural integrity against the high-moisture filling.
