Ingredients
Crust
3 tbsp unsalted butter, melted
12 Oreo cookies, crushed into fine crumbs
Strawberry Topping
1 1/4 cups strawberries, diced
1 tbsp sugar
1 tbsp water
2 tsp lemon juice
1/2 tsp cornstarch
Cheesecake Filling
8 oz cream cheese, softened
1/3 cup sour cream
1/3 cup sugar
1/2 tsp vanilla extract
1 large egg
12 Oreo cookies, roughly crushed
Garnish (optional)
Extra crushed Oreos
Instructions
Prepare crust: Line an 8×8 inch pan with parchment. Mix crushed Oreos with melted butter. Press firmly into pan and chill.
Cook topping: Combine strawberries, sugar, water, lemon juice, and cornstarch in saucepan. Cook until thick and glossy. Cool.
Mix filling: Beat cream cheese until smooth. Add sour cream, sugar, vanilla, and egg. Fold in crushed Oreos.
Assemble: Pour filling over crust. Bake 35-40 minutes. Cool.
Add topping: Spread cooled strawberry mixture over cheesecake.
Chill & serve: Refrigerate minimum 3 hours. Cut and garnish with Oreos.
Notes
Use room-temperature cream cheese and sour cream.
Cook topping slowly to thicken.
Cool bars fully to avoid condensation.
Slice with warm knife for clean edges.
Store refrigerated 5 days or freeze 2 months.
