  1. Prep the Strawberries
    Rinse, hull, and pat dry the strawberries. Slice half and finely chop the rest. Toss the chopped portion with 1 tsp sugar and let sit for 15–20 minutes to enhance flavor and draw out excess moisture.

  2. Make the Crust
    In a bowl, combine graham cracker crumbs, melted butter, and sugar (if using). Press into the bottom of a 9×13-inch dish. Chill for 15 minutes to firm up.

  3. Prepare the Cream Filling
    Beat the cream cheese with powdered sugar and vanilla until smooth. In a separate bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

  4. Assemble the Layers
    Spread a layer of cream filling over the chilled crust. Top with sliced and chopped strawberries. Repeat layering: crackers, cream, berries. Finish with a final thick layer of the cream filling on top.

  5. Chill and Garnish
    Cover and refrigerate for at least 4–6 hours, ideally overnight. Just before serving, garnish with halved strawberries, mint, or white chocolate curls.

  • For cleaner slices, chill overnight and use a hot knife to cut.
