Description

Quick, savory one-pan dish with tender chicken, springy noodles, and glossy garlic sauce, balanced with sweetness, saltiness, and umami.


Ingredients

2 chicken breasts, thinly sliced
3 tbsp soy sauce, divided
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tbsp brown sugar
1 tsp sesame oil
4 garlic cloves, minced
1 tbsp cornstarch
1 tbsp vegetable oil
200 g noodles (egg or rice noodles)
Spring onions, sliced (optional)
Sesame seeds (optional)
Chili flakes (optional)


Instructions

Marinate chicken: Toss chicken with 1 tbsp soy sauce and cornstarch; rest 10 mins.
Prepare sauce: Mix remaining soy sauce, oyster sauce, hoisin, brown sugar, sesame oil, garlic.
Cook noodles: Boil noodles al dente; drain and rinse.
Sear chicken: Cook in oil over medium-high until golden, remove.
Cook sauce: Simmer sauce in pan 1-2 mins until thick.
Combine: Add chicken, noodles; toss, add noodle water if needed.
Serve: Garnish with spring onions, sesame seeds, chili flakes if desired.

Notes

Coat chicken in cornstarch for crispiness.
Use fresh garlic; avoid burning.
Reserve noodle water for sauce consistency.
Finish with sesame oil for aroma.
Serve immediately while hot.
