Description

The ultimate mashup of two legendary appetizers. These thick, sweet onion rings are stuffed with a creamy, zesty jalapeño and cheddar filling. A double-layer onion ‘shell’ holds the rich cream cheese mixture perfectly in place during frying, creating a crispy, molten gourmet gastropub experience.

The Filling

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 jalapeños, seeded and finely chopped
  • 1 tsp garlic powder
  • Salt and black pepper, to taste

The Onion Shells

  • 2 large white or yellow onions, cut into 1/2-inch thick rings

The Breading Station

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • Oil for frying

Instructions

Onions: Separate layers. Select a large outer ring and a smaller inner ring that fits inside with a gap.

Filling: Mix cream cheese, cheddar, jalapeños, and garlic powder until smooth.

Stuff: Fill the space between the two onion rings with the cheese mixture, pressing the inner ring to sandwich the filling.

Bread: Coat rings in flour, dip in egg wash, then coat in breadcrumbs. Repeat egg and crumbs for a double seal.

Fry: Heat oil to 350°F. Fry for 3–4 mins per side until golden-brown. Drain on paper towels.

Notes

The Chill Factor: If the stuffed rings feel soft, freeze for 15 mins before frying to keep the cheese from leaking.

Wear Gloves: Capsaicin from jalapeños can cause long-lasting skin burns. Use gloves and wash hands with grease-cutting soap.

Size Matters: Ensure the onions are large enough to allow a thick layer of filling between the two rings.
