Ingredients
The Patty Melt
- 2 (80/20) beef patties
- 2 slices sourdough bread
- 2 slices pepper jack cheese
- 1 tbsp butter + seasoning
The Spicy Toppings
- 2 fresh jalapeños, diced
- 1/2 small white onion, diced
- Sriracha Mayo: 2 tbsp mayo, 2 tbsp sriracha
Instructions
Aromatics: Sauté diced jalapeños and onions in butter until caramelized. Set aside.
Smash: Place patties in a hot skillet; smash thin with a spatula. Season and cook until a dark crust forms. Flip and finish.
Toast: Wipe pan. Butter sourdough edge-to-edge; place butter-side down in skillet.
Layer: Build with patty and cheese on each slice. Drizzle with sriracha mayo and top with jalapeño mixture.
Finish: Fold halves together once bread is golden and cheese is molten. Slice and serve.
Notes
The Clean Pan Rule: Wipe the skillet before toasting bread to ensure a clean, buttery crunch rather than a greasy, soggy finish.
Why Sourdough? Its dense structure acts as a ‘backbone,’ preventing the sandwich from falling apart under the weight of the juicy beef and sauces.
