The Chipotle Sauce

  • 3/4 cup mayonnaise & 1/4 cup sour cream
  • 23 tbsp adobo paste (plus pureed chipotles)
  • 1/2 tbsp honey & juice of 1 lime
  • 1/2 tsp chili powder, 1/2 tsp black pepper

The Sandwiches

  • 56 large eggs
  • 4 brioche buns
  • 4 slices American cheese
  • 12 avocados, sliced
  • 1 tbsp butter, 1–2 tsp brown sugar, salt/pepper

Instructions

Sauce: Whisk mayo, sour cream, lime juice, honey, adobo, and spices until smooth.

Buns: Butter and toast brioche buns until golden brown.

Eggs: Melt butter over medium heat. Crack eggs into the pan; break yolks and move slowly/constantly for a velvety texture.

Caramelize: Just before finishing, sprinkle brown sugar, salt, and pepper over eggs.

Assemble: Spread sauce on both bun sides. Layer eggs, cheese, and avocado. Serve warm.

Notes

The Fluff Factor: Keep heat low; if eggs sizzle, pull the pan off for a few seconds to prevent a rubbery texture.
