Ingredients

- 1/2 tsp chili powder, 1/2 tsp black pepper
The Sandwiches
- 5–6 large eggs
- 4 brioche buns
- 4 slices American cheese
- 1–2 avocados, sliced
- 1 tbsp butter, 1–2 tsp brown sugar, salt/pepper
Instructions
Sauce: Whisk mayo, sour cream, lime juice, honey, adobo, and spices until smooth.
Buns: Butter and toast brioche buns until golden brown.
Eggs: Melt butter over medium heat. Crack eggs into the pan; break yolks and move slowly/constantly for a velvety texture.
Caramelize: Just before finishing, sprinkle brown sugar, salt, and pepper over eggs.
Assemble: Spread sauce on both bun sides. Layer eggs, cheese, and avocado. Serve warm.
