1½ cups buttermilk
2 cups all-purpose flour
4 tbsp cornstarch
1½ tbsp Cajun seasoning
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp paprika
2 eggs
1 tbsp hot sauce (such as Frank’s)
1 cup buttermilk
¼ cup mayonnaise
¼ tsp cayenne pepper
Brioche buns
Vegetable oil, for frying
Butter, for toasting buns
Pickles (optional for serving)


Instructions

  1. Marinate chicken: Combine chicken, salt, onion powder, garlic powder, paprika, Cajun seasoning, white pepper, and buttermilk in a bowl. Stir well and marinate 30 minutes to 2 hours.

  2. Heat oil: Fill a deep pot with oil and heat slowly to 350°F (175°C). Check temperature with a thermometer or by dipping a wooden spoon—bubbles indicate readiness.

  3. Prepare coating mixtures: In one bowl, combine flour, cornstarch, and dry seasonings. In another bowl, whisk eggs, hot sauce, and buttermilk.

  4. Coat chicken: Remove chicken from marinade and shake off excess. Dip each piece in egg mixture, then dredge in flour mixture until fully coated.

  5. Fry chicken: Fry 12–15 minutes, turning occasionally, until deep golden brown and internal temperature reaches 165°F (74°C). Let rest on a rack.

  6. Toast buns: Butter the cut sides of brioche buns and toast in a skillet until golden.

  7. Make spicy mayo: Mix mayonnaise and cayenne pepper until smooth.
