Description

This Spicy Bang Bang Chicken Fried Rice is a vibrant fusion dish. Featuring crispy air-fried chicken tossed in zesty Bang Bang sauce served over a buttery, hibachi-style fried rice base, it’s a flavor-packed elevating a standard weeknight dinner into a restaurant-quality experience.

Ingredients

Scale

The Bang Bang Chicken

  • 1 1/2 lbs chicken breasts, 1-inch cubes
  • 1 tablespoon vegetable oil
  • Spice Blend: 1 tsp paprika, 1 tsp garlic powder, 1 tsp kosher salt, 1/2 tsp black pepper
  • 1 cup Bang Bang sauce (divided)

The Fried Rice

  • 4 cups cooked long-grain white rice (cold)
  • 2 tablespoons sesame oil (divided)
  • 4 large eggs, beaten (+ 1/2 tsp salt)
  • 2 large carrots, diced
  • 1 large white onion, diced
  • 1/4 cup green onions, diced
  • 1 teaspoon garlic, minced
  • 1/4 cup unsalted butter, melted
  • Liquids: 2 tbsp soy sauce, 1 tsp lemon juice
  • 1/3 cup frozen peas

Instructions

Air Fry Chicken: Preheat air fryer to 400°F. Toss chicken with oil and spices. Air fry for 11–12 mins, flipping halfway, until 165°F.

Eggs: Heat 1 tbsp sesame oil in a skillet. Scramble eggs until soft curds form; set aside.

Veggies: Sauté carrots, white onions, and green onions for 5 mins. Add garlic for 1 min.

Fry Rice: Add cold rice to the skillet. Break up clumps and let sit for 30–60 seconds to toast.

Finish: Stir in eggs, melted butter, lemon juice, soy sauce, and peas. Heat through.

Assemble: Toss chicken with 1/2 cup Bang Bang sauce. Serve over rice and drizzle with remaining sauce.

Notes

Cold Rice is Crucial: Leftover rice has lower moisture, ensuring grains stay separate rather than becoming mushy.

The Butter Secret: Adding melted butter at the end creates the glossy, rich mouthfeel of authentic hibachi fried rice.

Don’t Overcrowd: Work in batches if needed so the chicken crisps instead of steaming.
