Ingredients
The Filling
- 4 large ripe bananas, sliced
- 1 cup self-rising flour
- 1 cup granulated sugar
- 1 cup milk
- 1/2 cup (1 stick) butter, melted
- 2 teaspoons banana extract (optional)
The Oat & Pecan Streusel
- 1 cup old-fashioned oats
- 1/2 cup chopped pecans
- 1/2 cup butter, softened
- 3/4 cup light brown sugar, packed
- 1/2 cup self-rising flour
Instructions
Prep: Preheat oven to 375°F. Grease a 9×9-inch baking dish.
Streusel: Combine brown sugar, flour, and softened butter until crumbly. Fold in oats and pecans.
Batter: Whisk 1 cup flour, sugar, and milk. Whisk in melted butter and optional extract.
Layer: Pour batter into the dish. Arrange sliced bananas on top in an even layer. DO NOT STIR.
Bake: Crumble streusel over the bananas and bake for 45–50 mins until golden and set. Let cool for 10 mins before serving.
Notes
Don’t Stir! This allows the batter to rise up around the fruit, creating the signature custardy middle layer.
Self-Rising Flour: If using all-purpose, add 1.5 tsp baking powder and 1/4 tsp salt per cup of flour.
Ripeness: Use bananas with brown spots for higher sugar content and a ‘melt-in-your-mouth’ texture.
