Snickerdoodle Cobbler

Description

This brilliantly simple Snickerdoodle Cobbler transforms a basic cookie mix into a warm, gooey, and incredibly comforting dessert. The recipe creates a perfect fusion of two beloved treats: a warm apple cobbler and a chewy snickerdoodle cookie. It’s a “dump and bake” dessert that tastes like you spent hours in the kitchen, with a sweet apple pie filling and a cinnamony, caramel-kissed cookie crust.

Ingredients

Scale

1 package snickerdoodle cookie mix (with mix and cinnamon sugar packet)
½ cup butter, softened
1 egg
1 can apple pie filling
3 tablespoons caramel topping

Instructions

Prepare the Cookie Dough Base:
Preheat your oven to 375°F (190°C) and spray an 8×8-inch baking pan with cooking spray. In a medium bowl, combine the snickerdoodle cookie mix (not the cinnamon sugar packet), softened butter, and egg. Mix until a soft cookie dough forms.

Layer the Cobbler:
Divide the cookie dough in half. Pinch off small sections from one half and scatter them across the bottom of the prepared pan. Sprinkle half of the cinnamon sugar packet over this bottom layer.

Add the Filling and Topping:
Spoon the entire can of apple pie filling over the bottom cookie dough layer. Pinch off small sections from the remaining dough and scatter them over the apple filling. Sprinkle the rest of the cinnamon sugar packet over the top, then drizzle with the caramel topping.

Bake to Golden Perfection:
Bake for 30-35 minutes, until the cookie topping is golden brown. Let the cobbler cool slightly before serving.

Notes

Serving Suggestion:
This cobbler is best served warm, topped with a scoop of vanilla ice cream to melt into the gooey apple and caramel.

Fruity Variations:
This recipe is incredibly versatile. Instead of apple pie filling, try using a can of peach or cherry pie filling for a different fruity twist.

Storage and Reheating:
Store leftover cobbler in an airtight container in the refrigerator for up to three days. To reheat, microwave individual portions for 10-20 seconds until warmed through.
