Ingredients
The Base
- 2 pounds potatoes (Russet or Yukon Gold), cut into 1 ½- to 2-inch chunks
- 2 pounds skinless, boneless chicken breasts, diced into 1 ½-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon kosher salt, divided
- 3/4 teaspoon ground black pepper, divided
- 1/2 teaspoon paprika
The Sauce & Topping
- 1 cup creamy Parmesan garlic sauce (e.g., Buffalo Wild Wings brand)
- 1/2 cup water or chicken stock
- 2 cups shredded Mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season Potatoes
In the bottom of a 6-quart slow cooker, combine the potato chunks, olive oil, 3/4 teaspoon of the salt, 1/2 teaspoon of the black pepper, and the paprika. Toss well until the potatoes are evenly coated.
Add Chicken
Place the diced chicken breast pieces in an even layer on top of the potatoes. Season the chicken with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
Make the Sauce
In a small bowl, whisk together the creamy Parmesan garlic sauce and the water (or chicken stock) until fully combined. Pour this mixture evenly over the chicken and potatoes.
Slow Cook
Cover and cook on High for 4 hours (or on Low for 6 hours).
Check
The dish is ready when the chicken is cooked through and the potatoes are fork-tender.
Melt Cheese
During the last 20 minutes of cooking, sprinkle the shredded Mozzarella and grated Parmesan cheese over the top. Cover and continue cooking until the cheese is completely melted and bubbly.
Serve

Notes
Potato Size: Don’t cut your potatoes too small! Keep them around 1.5 to 2 inches. If they are too small, they will turn into mush before the chicken is fully tender.
Layering Order: Always place the potatoes on the bottom. They require more direct heat to cook through than the chicken does.
Sauce Brand: This recipe relies on a bottled “Creamy Parmesan Garlic” wing sauce for flavor. If you prefer a homemade version, you can substitute 1 cup of your own sauce.
Liquid Adjustment: The 1/2 cup of water helps thin the thick wing sauce so it reaches the bottom of the pot. If you prefer a thicker, stickier result, reduce the water to 1/4 cup.
