8 large eggs
1 tablespoon milk
1 tablespoon butter
8 breakfast sausage links (pork, turkey, or beef)
8 flour tortillas (8-inch)
1 cup shredded cheddar cheese
Salt and pepper to taste

Instructions

Cook Sausage and Scramble Eggs
In a large skillet over medium-high heat, cook the breakfast sausage links until they are fully browned and cooked through. Remove them from the skillet and set aside. In a bowl, whisk together the eggs, milk, salt, and pepper. Melt the butter in the same skillet over medium heat, then add the egg mixture. Gently scramble the eggs until they are just set but still moist. Avoid overcooking, as they will be heated again.

Assemble the Roll-Ups
Warm the tortillas in the microwave for 15-20 seconds to make them soft and pliable. Lay one tortilla flat and sprinkle a line of shredded cheese down the center. Top with a portion of the scrambled eggs and place one cooked sausage link on top.

Roll and Sear
Fold the left and right sides of the tortilla inward over the filling, then tightly roll it up from the bottom to create a sealed burrito-style wrap. Lightly coat a clean skillet with cooking spray and heat it over medium heat. Place the roll-ups seam-side down in the hot pan. Cook for 2-3 minutes per side, until each side is golden brown and crispy.

Notes

Tear-Free Rolling: For perfectly flexible tortillas that won’t tear, warm them between two lightly damp paper towels in the microwave. This quick steam makes a huge difference.

Don’t Overfill: To prevent the filling from spilling out, be sure to leave about an inch of empty space around the edges of the tortilla.

Make-Ahead & Storage: These roll-ups are perfect for meal prep. Allow the cooked roll-ups to cool completely, then wrap each one individually in plastic wrap or foil. Store them in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 2 months.
