Ingredients
The Homemade Caramel
- 1 batch 5-Minute Hard Caramel (chopped into shards)
The Cookie Dough
- 3 1/4 cups flour, 1 cup softened butter
- 1 1/2 cups brown sugar, 1/2 cup white sugar
- 2 eggs, 1.5 tbsp vanilla, 1 tsp each: baking powder, soda, sea salt
The Mix-ins & Topping
- 1 1/2 cups dark chocolate (chopped or chips)
- Flaky sea salt (Maldon)
Instructions
Caramel: Cook sugar to golden bronze, cool thin, and chop into shards.
Cream: Beat butter, sugars, and vanilla for 4–5 mins until very fluffy.
Mix: Add eggs one at a time. Gradually mix in dry ingredients.
Fold: Gently stir in chocolate chunks and caramel shards.
Bake: Bake large scoops at 350°F for 11 mins. Nudge edges into circles, then bake 1 final min.
Set: Sprinkle with sea salt and cool on the pan for 10 mins.
Notes
The 5-Minute Rule: Do not cut creaming short! It prevents cookies from falling flat or becoming greasy.
