Instructions

Compote: Simmer rhubarb, sugar, and water for 8 mins. Stir in cornstarch; cook 2 mins until thick. Cool completely.

Prep: Preheat oven to 350°F. Grease a 13×9 pan.

Crumble: Mix butter, flour, oats, brown sugar, and salt. Press half firmly into the pan bottom.

Cheesecake: Whisk cream cheese, sifted sugar, and egg until smooth. Spread over the crust.

Layer: Spoon cooled compote over the cheese layer. Mix almonds into remaining crumble; sprinkle over fruit.

Bake: Bake 28–32 mins until golden. Cool completely before slicing.
