Ingredients

  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 300 g white chocolate chips or chopped white chocolate

Instructions

  1. Beat softened butter, brown sugar, and white sugar for 2-3 minutes until fluffy and pale.
  2. Mix in egg, vanilla extract, and red food coloring until evenly tinted.
  3. Whisk flour, cocoa, baking powder, baking soda, and salt in a separate bowl.
  4. Add dry ingredients to wet in two parts, mixing just until no flour streaks remain.
  5. Fold in white chocolate chips, reserving some to press on top before baking.
  6. Cover and chill dough at least 30 minutes (overnight for thicker cookies).
  7. Preheat oven to 350°F (175°C). Roll tablespoon-sized dough balls, spaced 2 inches apart, press extra chocolate chips on top.
  8. Bake 10-12 minutes until edges are set and centers slightly soft. Cool 5 minutes on trays, then transfer to wire racks.
