Ingredients
The Oat Dough (Crust & Crumble)
- 1 cup all-purpose flour
- 3/4 cup old-fashioned whole-rolled oats
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar + 1/4 cup light brown sugar
- 1 tsp vanilla extract, pinch of salt
The Filling
- 12 oz (approx. 1 cup) raspberry preserves
Instructions
Prep: Preheat oven to 350°F. Line an 8-inch square pan with foil and spray with cooking spray.
Dough: Melt butter; whisk in sugars and vanilla. Stir in flour, oats, and salt until clumpy.
Base: Reserve 1 cup of dough. Press the remaining dough firmly into the pan to create an even crust.
Layer: Spread raspberry preserves evenly over the crust to the edges.
Crumble: Squeeze the reserved dough into clumps and sprinkle over the preserves.
Bake: Bake for 30–32 mins until edges are set. Cool completely (2 hours) before slicing.
Notes
Oat Selection: Use old-fashioned rolled oats; quick oats absorb too much moisture and create a sandy, dry texture.
The ‘Squeeze’ Technique: Squeezing dough in your palm before sprinkling creates professional, rustic crumble chunks.
Patience for Slicing: Cooling allows the pectin in the preserves to re-set, ensuring clean, sharp squares.
