Description

This small-batch Philly Fluff Cake delivers all the classic richness and fluffy texture of the original recipe, but in a more modest size perfect for smaller households or intimate gatherings. Made with a trio of fats (cream cheese, butter, and shortening), this bundt cake bakes up moist, dense, and delicately sweet, with a tender crumb that stays fresh for days. A simple dusting of powdered sugar is all it needs to shine.

Ingredients

Scale

Core Ingredients

5 oz cream cheese, softened
¼ cup unsalted butter, softened
¼ cup butter-flavored vegetable shortening
1 cup granulated sugar
3 large eggs, room temperature
1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
1 tsp vanilla extract
¼ cup powdered sugar, for dusting

Instructions

  • Preheat & Prepare Pan
Preheat oven to 325°F (163°C). Generously grease and flour a small bundt or tube pan to prevent sticking.

  • Cream the Fats
In a mixing bowl, beat cream cheese, butter, and shortening together until pale and fluffy, about 3–4 minutes. This step adds essential air for a light texture.

  • Add Sugar & Eggs
Gradually add sugar while continuing to beat. Add eggs one at a time, mixing well after each to maintain a smooth batter.

  • Incorporate Dry Ingredients
In a separate bowl, sift together the flour, baking powder, and salt. Add dry ingredients to the wet mixture in two additions, mixing just until combined.

  • Flavor & Bake
Stir in vanilla extract. Pour batter into the prepared pan and smooth the top. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool & Finish
Let cake cool in the pan for 15–20 minutes, then invert onto a wire rack. Once fully cooled, dust with powdered sugar before serving.

Notes

  • Butter-flavored shortening enhances richness and flavor don’t skip it for best results.

  • If using a dark or nonstick pan, check for doneness 5 minutes early.

  • This cake is perfect for make-ahead desserts; it stays moist up to 3 days when stored in an airtight container.
