Description

1 cup Oreo cookie crumbs
2½ tbsp melted butter
Cheesecake Filling
2 (8 oz) packages cream cheese, softened

2 large eggs

Neon green gel food coloring, to desired shade

Instructions

  1. Preheat oven: Set to 350°F (177°C). Line a cupcake pan with paper liners.

  2. Prepare crust: Finely crush Oreos in a food processor. Mix with melted butter until combined. Spoon evenly into liners and press firmly to form crusts.

  3. Make filling: Beat cream cheese and sugar until smooth. Add eggs and vanilla, mixing on low speed until just combined. Tint with neon green gel food coloring until bright green.

  4. Fill liners: Spoon about ¼ cup cheesecake batter over each crust, filling close to the top.

  5. Bake: Bake 15–17 minutes until centers are set but slightly jiggly.

  6. Cool and chill: Let cool completely in the pan, then refrigerate at least 2 hours or until firm.
