Ingredients
12 eggs, hard boiled and peeled
1 (8 oz) package cream cheese, room temperature
1/2 cup mayo
2 tablespoons yellow mustard
1 ½ tablespoons white vinegar
1 teaspoon paprika
1 teaspoon salt
Pinch of black pepper
Pinch of cayenne pepper
2 teaspoons chopped chives, divided
Pickles for garnish, optional
Crackers or veggies for serving
Instructions
Place 6 hard-boiled eggs in a food processor. Halve the remaining 6 eggs, add yolks to processor, reserve whites.
Add cream cheese, mayo, mustard, vinegar, paprika, salt, black pepper, cayenne, and half the chives; process until smooth.
Chop reserved egg whites and fold into mixture by hand. Transfer to serving bowl.
Top with remaining chives, extra paprika, and pickle slices if desired. Serve with crackers, pretzels, or veggie sticks.
