Description

Ingredients

4 packets hot cocoa mix (about ¾ cup, not sugar-free)

2 tsp baking powder
1 cup chocolate chips
1 cup mallow bits (dehydrated mini marshmallows)


Instructions

  1. Preheat oven: Set to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.

  2. Cream butter and sugars: Beat butter, granulated sugar, and brown sugar together until light and fluffy.

  3. Add wet ingredients: Mix in eggs one at a time, then stir in vanilla until fully combined.

  4. Combine dry ingredients: In a separate bowl, whisk flour, hot cocoa mix, salt, baking soda, and baking powder.

  5. Make dough: Gradually beat dry ingredients into wet mixture until just combined. Fold in chocolate chips and mallow bits gently.

  6. Chill dough: Cover and refrigerate 30 minutes (up to 24 hours) to prevent spreading.

  7. Bake: Scoop tablespoon‑sized portions onto prepared sheets, spacing 2 inches apart. Bake 9–11 minutes until edges set and lightly golden.

  8. Cool: Let cookies rest on baking sheet 5 minutes before moving to a wire rack to cool completely.

Notes

Use mallow bits (not regular marshmallows) as they hold shape during baking.

Chill dough to enhance flavor and prevent spreading.

Avoid overbaking to keep cookies soft with set edges.

Press a few chocolate chips or mallow bits on top after baking for appearance.
