Tender honey-lime marinated chicken served with fresh roasted corn salad of avocado, cherry tomatoes, and black beans, paired with fragrant cilantro lime rice. A wholesome and flavorful bowl perfect for warm weather or light dinners.
Ingredients
Honey Cilantro Lime Chicken
1 lb thin-sliced chicken breast
1 tbsp Better Than Bouillon (chicken)
Juice of 1 lime (about 2 tbsp)
3 tbsp honey
4 garlic cloves, minced
½ tbsp soy sauce
¼ cup chopped cilantro
Chili lime seasoning, to taste
Onion powder, to taste
Avocado Roasted Corn Salad
1 cup roasted corn
¾ cup cherry tomatoes, halved
1 mini cucumber (about ½ cup), chopped
½ cup roasted red peppers, chopped
⅓ cup black beans, rinsed and drained
⅓ cup red onion, diced
2 tbsp chopped cilantro
2 tbsp olive oil
1 tbsp rice vinegar
2 tsp Good Seasons Italian seasoning
1 tsp elote seasoning
Cilantro Lime Rice (Makes 2 servings)
1½ cups white rice, cooked
2–3 tbsp chopped cilantro
Juice of 1–2 limes, to taste
Salt, to taste
Instructions
Honey Cilantro Lime Chicken

Whisk lime juice, honey, garlic, soy sauce, Better Than Bouillon, cilantro, chili lime seasoning, onion powder, paprika, salt, and pepper in a medium bowl.

Coat chicken in marinade; refrigerate 15–30 minutes or up to 2 hours. Optionally reserve 1 tbsp marinade for glazing.

Heat skillet over medium; cook chicken 4–6 minutes per side until caramelized and cooked.

Brush with reserved marinade in the last minute; rest and slice.
Avocado Roasted Corn Salad

Combine corn, tomatoes, cucumber, roasted red peppers, black beans, red onion, and cilantro in a bowl.

Whisk olive oil, rice vinegar, Italian seasoning, and elote seasoning.

Toss dressing with vegetables; chill 10–15 minutes.
Cilantro Lime Rice

Cook rice as per package instructions.

Fluff rice, stir in cilantro, lime juice, and salt to taste.
Assemble the Bowl

Add ¾ cup cilantro lime rice to each bowl.

Top with sliced chicken and a portion of avocado roasted corn salad.
