Ingredients
The Honey Chipotle Salmon
- 1 lb salmon, skin removed, cut into 1-inch chunks
- Marinade: 2 tbsp olive oil, 1 tbsp honey, 1 grated garlic clove, 1 tsp chipotle powder, 1/4 tsp sea salt
The Cabbage Slaw
- 2 cups finely shredded cabbage
- Dressing: 1 tsp ACV, 1 tsp honey, lime squeeze, pinch of salt
Toppings & Base
- 4–6 corn tortillas
- Guacamole: 1–2 ripe avocados, 1/4 cup cilantro, 1/2 lime, 1/4 tsp salt
- Chipotle Mayo: 1/4 cup mayo, 1 tbsp hot sauce, 1/4 tsp chipotle powder/garlic powder
Instructions
Marinate: Toss salmon chunks with oil, honey, and spices until coated.
Sear: Heat a skillet (cast-iron preferred) over medium-high. Cook salmon for 3–4 mins undisturbed to form a crust. Flip and cook 2–3 mins more.
Slaw: Massage shredded cabbage with salt for 1 min until softened. Stir in vinegar, honey, and lime.
Assemble: Char tortillas. Layer with guacamole, slaw, and salmon. Drizzle with chipotle mayo and garnish.
