Ingredients
Beef Filling
- 1 lb lean ground beef (90% lean or higher)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 teaspoons Worcestershire sauce
- 2/3 teaspoon salt
- 1/4 teaspoon pepper
Special Sauce
- 2 to 3 tablespoons plain Greek yogurt
- 1 1/2 tablespoons light mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard or Dijon mustard
- 1 tablespoon sweet pickle relish
- 1/4 teaspoon garlic powder
- 1/2 teaspoon pickle juice (optional)
- Pinch of smoked paprika
For Serving
- 4 large high-protein wraps or flour/whole wheat tortillas
- 1 1/2 cups shredded iceberg lettuce
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced or sliced dill pickles
- 1/4 to 1/3 cup chopped onion (optional)
Instructions
Prepare the Beef
Heat a skillet over medium-high heat. Add the ground beef, garlic powder, onion powder, salt, and pepper. Cook, breaking up the meat, until it is browned. Stir in the Worcestershire sauce and cook for another minute until the beef is slightly crispy edges. Alternatively, for a burger texture, form the seasoned meat into thin patties, pan-fry, and then chop roughly.
Make the Special Sauce
In a small bowl, whisk together the Greek yogurt, light mayonnaise, ketchup, mustard, sweet pickle relish, garlic powder, smoked paprika, and pickle juice (if using). Taste and adjust seasonings if you prefer it tangier or sweeter.
Warm the Wraps
Place your tortillas in the microwave for 10-15 seconds or warm them briefly in a dry pan. This makes them pliable and easier to roll without cracking.
Assemble the Wraps
Lay the wraps flat. Spread a generous amount of the special sauce down the center of each tortilla. Layer on the cooked beef, shredded iceberg lettuce, shredded cheddar cheese, pickles, and onions.
Roll and Toast
Fold the sides of the wrap in and roll it up tightly like a burrito. For the best experience, place the wrap seam-side down in a skillet over medium heat. Toast for 1-2 minutes per side until golden brown and sealed shut.
Notes
Toasting Tip: Do not skip the toasting step! placing the wrap seam-side down first seals it so it doesn’t unroll while you eat, and it warms the cheese for a better texture.
Let the Sauce Sit: The special sauce tastes even better if you make it an hour in advance, allowing the flavors to meld together.
Lettuce Texture: Shred the iceberg lettuce into very thin ribbons. This ensures the sauce and crunch are distributed evenly in every bite, rather than having large chunks of leaf.
