Ingredients
The Meat & Pasta
- 1 lb pasta (rotini, penne, or wide egg noodles)
- 1.65 lbs lean ground beef
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, chopped
- 2 teaspoons garlic, crushed
The Creamy Sauce
- 21 oz condensed tomato soup (two 10.5 oz cans)
- 21 oz condensed mushroom soup (two 10.5 oz cans)
- 1 cup milk
- Salt and black pepper, to taste
The Garnish
- 1/2 teaspoon paprika
- 1/2 teaspoon dried parsley
Instructions
Prep: Preheat oven to 350°F. Grease a large baking dish. Boil pasta until al dente; drain.
Brown: Sauté onion and garlic in olive oil. Add ground beef and cook until browned; drain grease.
Combine: In the pasta pot, stir together the cooked beef, soups, and milk until noodles are coated. Season with salt and pepper.
Bake: Transfer to the baking dish. Sprinkle with paprika and parsley. Bake for 25–30 minutes until bubbling.
Serve: Rest for 5 minutes before serving.
Notes
Al Dente is Key: Under-boiling the pasta ensures it doesn’t turn mushy during the oven bake.
Flavor Balance: The acidity in the tomato soup is vital for cutting through the richness of the mushroom soup.
The ‘Fond’ Secret: Deglazing the skillet with a splash of milk captures the savory browned bits for extra depth.
