The Peanut Butter Banana Base

  • 2 cups all-purpose flour
  • 1 1/2 cups mashed overripe bananas (3–4)
  • 1 cup brown sugar, packed
  • 1/2 cup creamy peanut butter
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • Leavening: 1.5 tsp baking powder, 0.5 tsp baking soda, 0.5 tsp salt

The ‘Jelly’ & Crunch

  • 1/2 cup + 2 tbsp raspberry preserves (divided)
  • 1/2 cup dry roasted peanuts, chopped

Instructions

Prep: Preheat oven to 350°F. Line a 9×5-inch loaf pan with parchment paper.

Mix: Whisk dry ingredients in one bowl. Blend wet ingredients (eggs, bananas, sugar, PB, oil) in another.

Combine: Stir wet into dry until just combined. Fold in chopped peanuts.

Swirl: Pour half the batter into the pan. Dollop 1/4 cup preserves and swirl with a knife. Repeat with remaining batter and preserves.

Bake: Bake for 60–70 mins. Cool completely. Drizzle with warmed final 2 tbsp of preserves before slicing.

Notes

The Swirl Technique: Use a light hand to create distinct ribbons rather than mixing the jelly into the batter for concentrated flavor pockets.

Banana Ripeness: spotted or black bananas have the highest sugar content and softest texture, vital for moisture.

Tenting: If the top browns too quickly due to the sugar in the preserves, loosely cover with foil at the 45-minute mark.
