Scale

Core Ingredients

  • 1 lb ground beef (80/20 for best flavor)
  • 4 large russet potatoes, thinly sliced (about 1/8-inch thick)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can (10.5 oz) cream of mushroom soup (or cream of cheddar)
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce

Optional Additions

  • 1/2 cup sautéed onions
  • 1/2 cup diced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare the ingredients
    • Thinly slice the potatoes into even 1/8-inch slices.
    • In a skillet over medium heat, cook the ground beef until browned. Drain excess grease and season with salt, pepper, garlic powder, onion powder, and Worcestershire sauce.
    • In a bowl, mix the sour cream and cream of mushroom soup to create a creamy base.
  3. Assemble the casserole
    • Layer half of the sliced potatoes in the baking dish.
    • Add half of the cooked ground beef over the potatoes.
    • Drizzle half of the creamy mixture over the beef.
    • Repeat the layers with the remaining potatoes, beef, and creamy mixture.
    • Top with shredded cheddar and mozzarella cheese.
  4. Bake the casserole
    • Cover the dish with foil and bake for 45 minutes.
    • Remove the foil and bake uncovered for an additional 15 minutes, until the cheese is golden and bubbly.
  5. Let it rest & serve
Let the casserole rest for 5-10 minutes before serving to allow the layers to set. Enjoy warm!

Notes

  • Use Yukon Gold potatoes for a slightly buttery texture.
  • To speed up cooking, parboil the potatoes for 5 minutes before layering.
  • Swap ground beef for ground turkey or chicken for a leaner version.
  • Add vegetables like spinach, zucchini, or bell peppers for extra nutrition.
  • If the mixture appears too dry before baking, add a few tablespoons of milk or broth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
