Ingredients

Scale

Cheesecake Swirl Ingredients
1 ½ (8-ounce) packages Full-Fat Cream Cheese, softened (12 ounces total)
1 large Egg
⅓ cup Granulated Sugar
1 teaspoon Vanilla Extract
Orange Food Coloring

Brownie Ingredients
12 ounces Dark Chocolate, chopped
1 cup plus 1 tablespoon Unsalted Butter (2 sticks plus 1 tablespoon)
1 ¼ cups packed Dark Brown Sugar
3 large Eggs
1 cup All-Purpose Flour
Black Food Coloring

Instructions

Prepare the Spooky Brownie Base:
Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper. In a saucepan over low heat, melt the dark chocolate and butter until smooth. Remove from heat and whisk in the dark brown sugar. Add the eggs one at a time, followed by several drops of black food coloring. Fold in the flour until just combined.

Mix the Pumpkin-Orange Cheesecake:
In a separate bowl, beat the softened cream cheese with an electric mixer until smooth. Add the egg, granulated sugar, and vanilla, beating until combined. Mix in several drops of orange food coloring until you achieve a vibrant orange color.

Create the Swirl:
Pour about two-thirds of the black brownie batter into the prepared pan. Dollop the orange cheesecake mixture over the brownie layer, then drop spoonfuls of the remaining brownie batter on top.

Swirl and Bake:
Use a knife or skewer to gently drag it through the layers, creating a marbled swirl effect. Bake for 35-40 minutes, or until a toothpick inserted into a brownie-only section comes out with moist crumbs. Let the brownies cool completely in the pan before slicing.

Notes

Complete Cooling is Key:
For the cleanest cuts, allow the brownies to cool completely to room temperature, and then chill them in the refrigerator for at least one hour before slicing. This helps the cheesecake layer set properly.

Achieving the Darkest Brownie:
To get a truly deep black color, use high-quality dark chocolate (70% cocoa or higher) and dark brown sugar. These ingredients create a naturally rich, dark base before you even add the food coloring.

Colorful Variations:
Instead of orange, try using green or purple food coloring in the cheesecake swirl for a different spooky effect. You can also make a three-color swirl for a “monster mash” look.
