  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt, plus more to taste
  • ¼ teaspoon ground black pepper
  • 1 to 2 teaspoons hot sauce (such as Sriracha), plus more for serving
  • 2 green onions, sliced

Instructions

1. Brown the Beef and Prepare Vegetables

Dice the onion and red bell pepper. Peel and dice the potatoes into uniform ¼-inch cubes. Heat the canola oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain any excess fat and set the beef aside.

2. Sauté Aromatics and Potatoes

In the same skillet, add the diced yellow onion and red bell pepper. Sauté for 4-5 minutes until softened. Stir in the diced potatoes and cook, stirring occasionally, until they begin to turn golden and a crust forms.

3. Simmer the Skillet

Return the browned ground beef to the skillet. Stir in the Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, dried oregano, kosher salt, and black pepper, mixing to coat everything evenly. Reduce the heat to a gentle simmer, cover, and cook for 15-20 minutes, or until the potatoes are fork-tender.

4. Finish and Serve

Remove the lid and simmer for another few minutes to allow any remaining liquid to reduce. Stir in the hot sauce and sliced green onions. Taste and adjust seasonings as needed. Serve immediately.

  • Tender Potatoes: To ensure your potatoes cook evenly and don’t stick together, soak the diced potatoes in cold water for 10-15 minutes before adding them to the skillet.
