Ingredients
The Balsamic-Blueberry Spread
- 1 cup fresh blueberries
- 2 tablespoons balsamic vinegar
- 3 tablespoons granulated sugar
The Sandwich
- 4 slices sturdy sourdough bread
- 4 slices sharp cheddar cheese
- 4 ounces goat cheese, crumbled
- Softened butter, for the exterior
Instructions
Reduction: Simmer blueberries, vinegar, and sugar in a saucepan for 5 mins until berries burst and liquid is a thick paste. Remove from heat.
Assemble: Spread blueberry reduction on two slices. Layer with cheddar and goat cheese. Close sandwiches.
Grill: Butter the bread exteriors. Grill in a skillet over medium heat for 2–3 mins per side until golden-brown and cheese is molten.
Serve: Rest for 30 seconds before slicing.
