Description

Discover the ultimate comfort food with this ridiculously easy Gluten-Free Crockpot Chicken and Gravy. Tender, shreddable chicken is slow-cooked to perfection in a silky, flavorful, and completely lump-free gravy. It’s the perfect ‘fix it and forget it’ meal for busy weeknights, delivering maximum soul-soothing flavor with minimal effort.

Ingredients

Scale

3 large Boneless Chicken Breasts, about 1.25 to 1.5 pounds
2.5 cups Chicken Stock
4 tablespoons Gluten Free Flour
1 teaspoon Chicken Bouillon
1 teaspoon Pepper
1 teaspoon Salt
1 teaspoon Garlic powder
1 teaspoon Braggs Sprinkle Seasoning
½ teaspoon Paprika

Instructions

Create the Gravy Base
In a medium-sized bowl, pour in the chicken stock. Whisk in the gluten-free flour, chicken bouillon, pepper, salt, garlic powder, Braggs Sprinkle Seasoning, and paprika until the mixture is completely smooth. Whisking the flour into the cold stock is key to preventing lumps.

Combine and Cook
Place the chicken breasts in the bottom of the crockpot in a single layer. Pour the prepared gravy mixture over the chicken. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.

Shred and Finalize
Once cooked, carefully remove the chicken from the crockpot and shred it using two forks. By now, the gravy in the crockpot should have thickened. Return the shredded chicken to the gravy and stir well to coat. Let it rest for a few minutes to absorb the flavor before serving.

Notes

Richer Flavor: For a deeper flavor, sear the chicken breasts in a hot skillet with a little oil for 2-3 minutes per side before adding them to the crockpot.

Thickening Gravy: If your gravy isn’t as thick as you’d like, create a slurry by whisking 1 tablespoon of gluten-free flour with 2 tablespoons of cold water. Stir this into the crockpot, turn the heat to high, and let it cook for 15-20 minutes until it thickens.

Add Vegetables: Turn this into a one-pot meal by adding hearty vegetables like chopped carrots, celery, or small potatoes halfway through the cooking time.

Chicken Thighs: Boneless, skinless chicken thighs work beautifully in this recipe and can result in even more tender meat. The cooking time remains the same.

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop, adding a splash of chicken stock if needed to thin the gravy.
