Description

A hearty crockpot meal with juicy chicken breasts simmered with seasoned potatoes and rich garlic Parmesan sauce, topped with melted mozzarella.


Ingredients

Chicken & Potatoes
1 lb chicken breast
5 medium potatoes, scrubbed and diced
1 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1 tsp paprika
1 tsp onion powder
1 tsp Italian seasoning
1 tsp garlic powder
2 tbsp minced garlic

Sauce & Cheese
Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat chicken)
1 cup shredded mozzarella cheese


Instructions

Prep potatoes: Toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika.

Layer potatoes in crockpot.

Season chicken with salt, pepper, paprika, onion powder, and Italian seasoning.

Add chicken over potatoes, sprinkle minced garlic.

Pour Garlic Parmesan sauce over chicken.

Cook on low 6 hours or high 3-4 hours.

Top with mozzarella, cover 10-15 minutes till melted.

Garnish with parsley; serve hot.

Avoid overcooking chicken.
Melt cheese under lid.
