Ingredients

Scale

For the Steak and Potatoes:

  • 1 lb steak (ribeye, sirloin, or New York strip), cut into bite-sized pieces
  • 1 lb baby potatoes (Yukon gold or russet), diced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tbsp fresh parsley, chopped

Optional Additions:

  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1/2 tsp smoked paprika

Instructions

  1. Prepare the Ingredients
Cut the steak into bite-sized cubes and season with salt, pepper, paprika, and garlic powder. Dice the potatoes into small, even pieces to ensure even cooking.
  2. Cook the Potatoes First
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer and cook undisturbed for 4–5 minutes until golden brown. Stir occasionally and continue cooking for another 5–7 minutes until fork-tender. Remove from the skillet and set aside.
  3. Sear the Steak Bites
Increase heat to high and add 1 tbsp olive oil. Place the steak bites in a single layer and sear for 1–2 minutes without stirring to develop a golden crust. Flip and cook for another 1–2 minutes until browned but still tender inside. Remove from the skillet and set aside.
  4. Make the Garlic Butter Sauce
Reduce heat to medium-low and melt butter in the same skillet. Stir in the minced garlic and cook for about 30 seconds until fragrant. Add fresh parsley and any optional ingredients like Worcestershire sauce or lemon juice.
  5. Combine and Serve
Return the cooked potatoes and steak to the skillet, tossing everything in the garlic butter sauce until well coated. Serve immediately, garnished with extra parsley or Parmesan cheese if desired.

Notes

  • For Extra Crispy Potatoes: Soak the diced potatoes in cold water for 10 minutes before cooking to remove excess starch.
  • Best Steak for This Recipe: Ribeye, sirloin, or New York strip works best due to their balance of tenderness and flavor.
  • Customizations: Add mushrooms, onions, or bell peppers for extra depth. A sprinkle of red pepper flakes can enhance the heat.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet to maintain crispiness.
