Ingredients
1 pound large shrimp, peeled and deveined
1 cup long-grain white rice, rinsed
1 small onion, finely chopped
4 cloves garlic, minced (divided)
4 tablespoons unsalted butter, melted (divided)
2 cups low-sodium chicken or seafood broth
Juice of 1 lemon
1/3 cup chopped fresh parsley
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Instructions
Preheat oven to 375°F (190°C). In a 9×13 inch baking dish, combine rice, onion, half the garlic, 2 tablespoons melted butter, smoked paprika, salt, and pepper. Stir to coat evenly.
Pour broth and lemon juice over rice mixture. Cover tightly with foil and bake 25 minutes until rice absorbs liquid but is not fully cooked.
Toss shrimp with remaining garlic, 2 tablespoons melted butter, and red pepper flakes if using. Pat shrimp dry.
Remove foil, fluff rice, arrange shrimp in a single layer on top. Bake uncovered 10 minutes until shrimp are pink and opaque.
Garnish with parsley and let rest 3–5 minutes before serving.
