Description

Festive twist on classic cinnamon rolls made with soft, fluffy dough mixed with colorful sprinkles. Enriched with milk, butter, eggs, almond extract, and topped with smooth cream cheese icing, perfect for celebrations.

Dough:
1 cup warm whole milk (100°F / 38°C)
2/3 cup granulated sugar (divided)
1 ½ tablespoons active dry or instant yeast (2 packets)
½ cup unsalted butter, softened
2 large eggs, room temperature
½ teaspoon vanilla extract
½ teaspoon salt
4 ½ cups all-purpose or bread flour, plus extra as needed
2 teaspoons oil (for greasing bowl)
Filling:
½ cup unsalted butter, softened, divided
2/3 cup all-purpose flour
¼ cup granulated sugar
¼ cup packed brown sugar
2 tablespoons powdered coffee creamer or nonfat dry milk
¼ teaspoon salt
1 teaspoon vanilla extract
½ cup rainbow sprinkles
2 teaspoons ground cinnamon
Cream Cheese Icing:
4 oz cream cheese, softened
1 cup powdered sugar
1 tablespoon milk or heavy cream
½ teaspoon vanilla extract
Optional: extra sprinkles for topping


Instructions

Prepare dough: Whisk warm milk, 2 tablespoons sugar, and yeast; let sit 5 minutes to foam.
Mix remaining sugar and butter, add eggs, vanilla, and salt; combine. Add flour gradually, mix to soft dough. Knead for 5 minutes until elastic. Let rise in greased bowl 2 hours until doubled.
Roll dough into 12×18 inch rectangle.
Make filling: Combine 2 tbsp butter, flour, sugars, coffee creamer, salt, and vanilla. Spread remaining butter on dough, then cinnamon and filling evenly. Sprinkle sprinkles, then roll tightly into log. Cut into 12 pieces in greased pan.
Second rise: Cover and let rise 1 hour.
Bake at 350°F for 25-28 minutes until golden; tent with foil mid-bake if needed.
Make icing: Beat cream cheese, powdered sugar, milk, and vanilla until creamy. Spread on warm rolls, garnish if desired.
