Description

1 cup (130 g) frozen mixed berries
1 cup (180 g) pitted Medjool dates
2 cups (185 g) rolled oats
1 cup (255 g) almond butter
¼ cup (28 g) ground flaxseeds
1 tsp (2.5 g) ground cinnamon
1½ cups (395 g) unsweetened soy yogurt


Instructions

  1. Prepare berries: In a small saucepan over medium heat, cook frozen berries, stirring occasionally until they release juices and soften. Remove from heat and let cool.

  2. Make base: In a food processor, blend dates until smooth. Add oats, almond butter, flaxseeds, and cinnamon; process until well combined into a sticky dough.

  3. Form crust: Press mixture firmly and evenly into a parchment‑lined 11×7‑inch (28×18 cm) pan to create a solid base.

  4. Add yogurt layer: Spread the soy yogurt evenly over the base.

  5. Add berry swirl: Drop spoonfuls of stewed berries on top of the yogurt layer. Use a knife or skewer to swirl gently, creating a marbled look.

  6. Freeze: Place in the freezer for 1–2 hours until the bars set and are firm enough to slice.

  7. Serve: Let bars thaw 3–5 minutes at room temperature before cutting into squares. Store leftovers in airtight containers in the freezer.
