Dill Pickle Ranch Smash Tacos with Crispy Cheese Lace

  • Author: Samantha Brooks
  • Total Time: 30 minutes
  • Yield: 8 Street Tacos 1x

Description

A brilliant fusion of zesty, tangy, and savory flavors. These tacos combine seasoned ground chicken with briny pickles and a unique crispy cheese lace. Finished with a creamy, protein-packed ranch cottage cheese drizzle, every bite offers a satisfying contrast of soft and shattered textures.

Ingredients

Scale

The Chicken Base

  • 1 lb ground chicken (or turkey)
  • 1 tsp each: garlic powder, paprika, salt, pepper
  • 8 street-taco-sized tortillas

The ‘Smash’ Crunch & Fillings

  • 1 cup shredded mozzarella or Jack cheese
  • 1/2 cup dill pickles, finely chopped
  • 1 cup shredded cabbage (shaved thin)

The Protein Ranch Sauce

  • 1/2 cup cottage cheese
  • 1 packet ranch seasoning
  • 1 squeeze fresh lemon juice

Instructions

Chicken: Season and cook ground chicken in a skillet over medium heat for 8–10 mins until browned.

Cheese Lace: Sprinkle thin circles of cheese in a non-stick skillet. Cook undisturbed for 3–4 mins until bubbly and golden. Let firm into a disc.

Sauce: Whisk or blend cottage cheese, ranch seasoning, and lemon juice until smooth.

Build: Warm tortillas. Layer with chicken, cabbage, and pickles.

Serve: Drizzle with ranch sauce and top with broken pieces of the crispy cheese lace.

Notes

The ‘Lace’ Logic: Wait for the bubbling to stop; this means moisture has evaporated, making the cheese brittle rather than chewy.

Cottage Cheese Hack: Blending cottage cheese provides a high-protein, tangy base that perfectly complements the pickles.

Cabbage Snap: Shaved cabbage maintains its ‘snap’ and structure against warm chicken much better than lettuce.
