A refreshing, high-crunch upgrade to the classic Caesar. Romaine is replaced with crisp mini seedless cucumbers, and bulky croutons are traded for a savory panko crumble toasted in salted butter. It’s vibrant, fresh, and stays crunchy much longer than a traditional leafy salad.
Ingredients
The Fresh Base
- 16 oz mini seedless cucumbers, sliced
- 1 cup Parmesan cheese, shaved (divided)
The Buttery Crunch
- 1/2 tbsp salted butter
- 1/4 cup panko breadcrumbs
The Dressing
- 1/2 cup Caesar dressing (store-bought or homemade)
Instructions
1. Toast: Melt butter in a skillet. Add panko and stir constantly for 2-3 minutes until deep golden. Remove from heat immediately.
2. Slice: Wash and dry cucumbers thoroughly. Slice into 1/4-inch rounds.
3. Toss: Mix cucumbers with dressing, 1/2 cup Parmesan, and 2 tbsp of the panko.
4. Garnish: Top with remaining Parmesan shavings and panko crunch. Serve immediately.
