Ingredients
For the Chicken and Potatoes
1 lb chicken breasts
5 medium sized potatoes, washed and diced
2 tbsp olive oil
For the Seasoning and Sauce
Salt, pepper, garlic powder, and paprika (to taste, for seasoning the potatoes)
1/2 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 tsp onion powder
1 tsp Italian seasoning
2 TBSP minced garlic
Buffalo Wild Wings Garlic Parmesan Sauce (enough to cover chicken)
1 cup of shredded mozzarella cheese
Instructions
Prepare and Season the Potatoes
Place the diced potatoes in the bottom of your crockpot. Drizzle with olive oil and season them with salt, pepper, garlic powder, and paprika. Stir to coat everything evenly.
Season the Chicken
Pat the chicken breasts dry. In a small bowl, mix the 1/2 tsp salt, 1/2 tsp pepper, 1 tsp paprika, 1 tsp onion powder, and 1 tsp Italian seasoning. Rub this spice blend all over the chicken.
Layer the Ingredients in the Slow Cooker
Place the seasoned chicken directly on top of the potatoes. Sprinkle the minced garlic over the chicken, then pour the Buffalo Wild Wings Garlic Parmesan Sauce over the chicken until it is covered. Do not stir.
Slow Cook to Perfection
Cover and cook on low for 6-7 hours or on high for 3-4 hours. The dish is ready when the chicken is cooked through to an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
Add the Cheese and Serve
Once cooked, shred the chicken directly in the crockpot with two forks. Sprinkle the shredded mozzarella cheese over the top, cover, and let it melt for an additional 5-10 minutes before serving.
Notes
Best Potatoes to Use: Russet or Yukon Gold potatoes work best for this recipe as they become tender and creamy without falling apart during the long cooking time.
Add Veggies: To make it a more complete meal, you can toss in some green beans or broccoli during the last 30-45 minutes of cooking.
Spice It Up: For a little heat, add a teaspoon of red pepper flakes to the chicken seasoning or a few dashes of your favorite hot sauce to the garlic parmesan sauce.
Storing Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3-4 days.
