Ingredients
For the Beef Base
- 1 lb ground beef
- 1 oz taco seasoning packet
- 1/3 cup water
For the Casserole
- 32 oz bag frozen diced hash browns
- 10.5 oz can cheddar cheese soup
- 2 cups Mexican shredded cheese (divided)
- 1/2 cup sour cream, 1/2 cup mild salsa
Instructions
Brown: Cook ground beef in a skillet for 7 mins; drain grease. Stir in taco seasoning and water; simmer 2 mins.
Mix: Transfer beef to a 5-6 qt slow cooker. Add potatoes, soup, 1 cup cheese, sour cream, and salsa. Stir until potatoes are coated.
Cook: Level the mixture and top with the remaining 1 cup of cheese. Cover and cook on High for 3–4 hours (or Low for 4–6 hours).
Serve: Garnish with parsley and fresh toppings.
