Ingredients
The Mushrooms & Base
- 12 oz white button mushrooms
- Cooking spray (olive oil or avocado oil)
- 1 cup all-purpose flour
- 2 eggs, lightly beaten
The Crispy Coating
- 1 cup Panko breadcrumbs (have extra on hand just in case)
- 1/2 teaspoon sea salt
- 1/4 teaspoon cracked black pepper
The “Ranch” Seasoning Blend
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Note: You can substitute the individual spices with 1 tablespoon of dry Ranch seasoning mix for a more intense flavor.
Instructions
Clean Mushrooms
Wipe the mushrooms clean with a damp cloth or a gentle vegetable brush. Crucial: Do not soak them in water. Mushrooms are sponges; if they are wet, they will steam inside the crust and make the breading soggy.
Prep
Leave small mushrooms whole. Cut larger ones into halves or quarters so they are uniform in size.
Setup Station
Create an assembly line with three shallow bowls:
Bowl 1: The flour.
Bowl 2: The beaten eggs.
Bowl 3: The Panko breadcrumbs mixed with salt, pepper, Italian seasoning, paprika, onion powder, and garlic powder.
Coat
Working one by one: Dredge the mushroom in flour (shake off excess), dip into the egg (let excess drip off), then roll in the Panko mixture until fully coated.
Arrange
Lightly mist the air fryer basket with cooking spray. Place mushrooms in the basket in a single layer. Space: Ensure they are not touching so the air can circulate. You may need to cook in batches.
Air Fry
Cook at 360°F (180°C) for 7 minutes. Shake: Shake the basket halfway through to ensure even browning. Check: If you see dry flour spots, give them a quick spritz of cooking spray.
Serve
When golden and crispy, remove carefully (they retain heat!). Serve hot with ranch dressing or marinara.
Notes
The Flour Step: Do not skip the flour! The smooth skin of a mushroom is slippery; the flour provides a dry surface for the egg to hold onto. Without it, the breading will slide right off.
Wet vs. Dry: Ensure your mushrooms are completely dry before breading. Moisture is the enemy of crispiness here.
Reheating: These are best eaten fresh. If you have leftovers, reheat them in the air fryer at 350°F for 3–4 minutes. Microwaving will turn them into rubbery mush.
Spice Kick: For a spicy version, add a pinch of cayenne pepper or chili powder to the flour bowl.
