Description

Transform leftover mashed potatoes into a gourmet appetizer. These potato balls are mixed with sharp cheddar and green onions, coated in a crunchy panko crust, and air-fried until golden. They offer a deep-fried crunch without the mess, featuring a molten, cheesy center.

  • 1 cup shredded cheddar cheese
  • 5 green onions, finely chopped

The Three-Step Coating

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Cooking spray or oil (for crisping)

Instructions

Mix: Combine chilled potatoes, cheese, and onions in a large bowl.

Form: Roll 2-tablespoon scoops of the mixture into smooth balls.

Bread: Coat each ball in flour, dip in beaten egg, and roll in panko crumbs.

Notes
