Ingredients
The Potato Center
- 4 cups (1kg) chilled mashed potatoes
- 1 cup shredded cheddar cheese
- 5 green onions, finely chopped
The Three-Step Coating
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Cooking spray or oil (for crisping)
Instructions
Mix: Combine chilled potatoes, cheese, and onions in a large bowl.
Form: Roll 2-tablespoon scoops of the mixture into smooth balls.
Bread: Coat each ball in flour, dip in beaten egg, and roll in panko crumbs.
Air Fry: Preheat air fryer to 375°F. Place balls in a single layer in the basket. Spray tops with oil.
Cook: Air fry for 10–15 minutes, turning halfway through, until deep golden brown and crispy.
Notes
Cold Potatoes are Key: Chilled potatoes contain set starches that provide a sturdy base; warm potatoes are too soft and will disintegrate during breading.
The Freezer Trick: If your potatoes are very creamy, freeze the rolled balls for 20 minutes before breading to maintain their shape.
