Ingredients
For the Flavor Base
- 2 tbsp unsalted butter, 4 cloves garlic (minced)
- 1/2 tsp each: salt, dried oregano, red pepper flakes, smoked paprika
- 1/4 tsp black pepper
For the Simmer
- 1/2 cup sun-dried tomatoes (chopped), 1/2 to 1 cup vegetable broth
- 2 (15-oz) cans butter beans (rinsed and drained)
For the Finish
- 1 cup fresh spinach (chopped), 1 cup heavy cream
- 1/2 cup grated parmesan, 2 tbsp fresh basil
Instructions
Flavor Base: Melt butter over medium heat. Sauté garlic and spices for 2 mins until fragrant.
Simmer: Stir in sun-dried tomatoes, 1/2 cup broth, and beans. Cook uncovered for 5 mins to reduce liquid.
Wilt: Remove from heat. Stir in spinach until wilted from residual heat.
Finish: Stir in cream, parmesan, and basil. Add a splash of broth if needed to reach desired silkiness.
Notes
Rinse the Beans: Thoroughly rinsing canned beans removes excess starch and metallic canning flavors for a cleaner sauce.
Temperature Control: Remove from heat before adding cream and parmesan to prevent the dairy from curdling or ‘breaking’.
Storage: Fridge for 3 days; reheat gently on low with a splash of broth.
