  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2/3 cup chicken stock
  • 3 tablespoons reduced-fat crème fraîche
  • 1/3 cup milk
  • 1/2 cup grated Parmesan
  • Herbs: 2 tsp Italian seasoning, salt/pepper to taste

The Fresh Finish

  • 6 cherry tomatoes, halved
  • 1 generous handful fresh spinach

Instructions

Pasta: Boil pasta until al dente. Reserve 2–3 tbsp pasta water, then drain.

Chicken: Season butterflied chicken with Cajun spices. Fry in a skillet for 4–5 mins per side until golden. Rest for 3 mins, then slice.

Aromatics: Sauté onion for 3–4 mins in the same pan, then add garlic for 30 seconds.

Sauce: Stir in Italian seasoning, stock, crème fraîche, and milk. Simmer for 3–5 mins until thickened.

Finish: Add tomatoes and spinach; cook until wilted. Stir in Parmesan. Toss with pasta and reserved water until silky. Top with sliced chicken.
