The Main Fillings

  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado, sliced
  • 4 slices of cheese (Swiss, Cheddar, or Provolone)
  • 1 tomato, sliced
  • 1 small red onion, thinly sliced

The Foundation & Spread

  • 4 slices of sturdy bread (Sourdough or Ciabatta)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and black pepper, to taste
  • Olive oil and butter for cooking

Instructions

Sear: Season chicken with salt/pepper. Cook in olive oil for 6–7 mins per side until 165°F. Rest for 5 mins before slicing on a diagonal.

Spread: Whisk mayonnaise and Dijon mustard together.

Assemble: Apply spread to bread. Layer chicken, avocado, cheese, onion, and tomato on two slices; top with remaining bread.

Grill: Heat skillet with butter/oil. Grill sandwiches for 3–4 mins per side, pressing gently until cheese melts and bread is golden-brown.

Serve: Let sit for one minute, slice, and serve hot.

Notes

The ‘Mayo-Crust’ Trick: Spread a thin layer of mayo on the outside of the bread for a more professional, uniform golden crunch; it has a higher smoke point than butter.

Resting is Mandatory: Slicing chicken immediately causes juices to escape. Resting lets fibers reabsorb moisture, preventing a soggy sandwich.

Cheese as Glue: Place cheese directly against the chicken and avocado so it acts as an adhesive to keep the vegetables from sliding out.
