8 oz linguine pasta
2 boneless skinless chicken breasts, cut into 1-inch pieces
2 tsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 tbsp Cajun seasoning, divided
Sauce
3 tbsp butter
2 tsp minced garlic
2/3 cup diced tomatoes
1 1/2 cups heavy whipping cream
1/2 cup grated Parmesan cheese
1 tsp paprika
2 tsp dried Italian seasoning
Garnish
Fresh parsley, chopped
Instructions
Cook pasta: Boil linguine in salted water until al dente. Drain, reserve some pasta water.
Cook chicken: Toss chicken with salt, pepper, and 1 tsp Cajun seasoning. Heat olive oil; cook chicken 6-8 minutes.
Make sauce base: Melt butter; sauté garlic 1 minute. Stir in tomatoes, remaining Cajun seasoning, paprika, and Italian seasoning; cook 3 minutes.
Add cream & cheese: Lower heat; add cream and Parmesan. Stir until melted and sauce thickens 3-4 minutes; season.
Combine: Add chicken and pasta to skillet; toss to coat. Add pasta water if needed.
Serve: Garnish with parsley and extra Parmesan. Serve warm.

Use high-quality Cajun seasoning for balanced flavor.
Add bell peppers or spinach for color/texture.
Stir cheese off heat to avoid curdling.
