The Protein & Base

  • 1.2 lbs chicken thighs or breasts
  • 1.5 tbsp olive oil + 2 tbsp tomato paste
  • 2 tsp sugar + 1 cup chicken broth (divided)

The Homemade Taco Paste

  • 3 tbsp lime juice + 1 tbsp olive oil + 2 cloves garlic
  • 2 tsp each: garlic powder, onion powder, oregano
  • 3 tsp each: cumin, paprika
  • Spices: 1 tsp salt, 1/2 tsp pepper, 1/2 tsp cayenne

For Serving

  • Warmed taco shells or tortillas
  • Toppings: Lettuce, cheese, sour cream, tomato, onion, avocado, cilantro

Instructions

Paste: Whisk lime juice, oil, garlic, dry spices, and 2 tbsp broth into a loose paste.

Sear: Coat chicken in paste. Sear in oil over medium-high for 3 mins per side. Remove and set aside.

Sauce: Lower heat. Add remaining broth, tomato paste, sugar, and reserved paste. Whisk to dissolve and scrape up the browned bits.

Shred: Shred chicken with forks; return to skillet. Toss in sauce for 2–3 mins until reduced to a glossy syrup.

Assemble: Scoop into warm tortillas and add fresh toppings.

Notes

Syrup Consistency: Wait for the sauce to become glossy; this ‘locks’ the flavor onto the chicken strands.

Thighs vs. Breasts: Thighs are recommended for their higher fat content, which keeps them juicy during the sear-and-simmer process.

Fond Management: Scrape up the browned bits after adding broth; they are the foundation of a great sauce.
