Ingredients
4 medium overripe bananas, mashed (~1¼ cups)
½ cup creamy peanut butter
2 tablespoons melted coconut oil
¼ cup pure maple syrup
2 eggs
1 tablespoon vanilla extract
1½ cups whole wheat pastry flour or all-purpose flour
1½ teaspoons baking soda
½ teaspoon kosher salt
1 cup semi-sweet or dark chocolate chips
Extra peanut butter for serving (optional)
Instructions
Preheat oven to 350°F (177°C). Grease a 16-cup muffin tin or line with paper liners.
In a blender or food processor, blend bananas, peanut butter, coconut oil, maple syrup, eggs, and vanilla until smooth.
Add flour, baking soda, and salt; pulse or blend briefly until combined.
Fold in chocolate chips gently.
Fill muffin cups about ⅔ full with batter.
Bake 20-22 minutes until set and toothpick inserted comes out clean.
Cool slightly; serve with extra peanut butter if desired.
Notes
Use very ripe bananas for natural sweetness and moisture.
