Ingredients
The Fudgy Chocolate Base
- 2 cups all-purpose flour, 1/2 cup cocoa (sifted)
- 3/4 cup softened butter, 1 1/4 cups brown sugar
- 1/3 cup melted semi-sweet chocolate, 1 egg, 2 tbsp milk
- 1 tsp baking soda, 1 tsp salt
The Cherry Topping
- 50 maraschino cherries (patted dry)
- 1/2 cup semi-sweet chocolate (melted)
Instructions
Prep: Preheat oven to 350°F. Beat butter and sugar for 2 mins. Mix in milk, egg, and 2 oz melted chocolate.
Combine: Gradually add dry ingredients until a thick dough forms.
Bake: Roll into 1-inch balls. Bake 8–10 mins. Immediately press a ‘well’ into hot cookies with a spoon.
Assemble: Once cool, spoon melted chocolate into wells. Press a dried cherry on top.
Drizzle: Use remaining chocolate to drizzle over the cherries. Let set before serving.
Notes
Dry the Cherries: Wet cherries will cause the chocolate to ‘seize’ (turn grainy) and slide off the cookie.
Timing is Everything: Press the thumbprint immediately out of the oven; if the structure sets, the cookies will crack.
Double Chocolate Secret: Adding melted chocolate directly to the dough creates a specific fudgy, brownie-like texture.
